Gotta keep up the blog posts! Winter programming has been going beautifully.
These are microgreens that we grew at Chicago Youth Centers– broccoli, kale, radish, and mustard greens. Microgreens are packed with flavor and nutrition, and are also so easy to grow in a sunny windowsill! They take 2-3 weeks to grow large enough for harvest. The children were so excited to finally trim the greens and add them to a salad with lettuce, spinach, cherry tomatoes, cucumbers and Ranch dressing! Typically I like to make an apple cider vinegar dressing with kids, but for this group I knew they might need a little more encouragement… they LOVED the salad, so it worked out! One girl said she never tasted salad that she liked before this. Success!!
